I have a 91 AT180 and it starts fine in warm weather but wont start in cold weather. All it does is it does one click then nothing lights work and everything i can hear the fuel pump priming but it wont start and only does this in Cold weather. It has a brand new battery and alternator

Thats exactally what I did for a while when the stock denso starter went out. Then again after a faulty one from autozone. Just a few taps on the solenoid of the starter and presto! But I had someone crank the key while I tapped.

That's correct, it is a 2 person job ; one holds the key @ 'start' position while the other 'taps' on the starter . I have gotten 3 bad reman starters in a row out of the box (new) from another large national chain store. I use Advance auto parts : their price is good and have a lifetime warranty. I prefer the factory Denso but they only have a year warranty.
